  1. Cook pancetta in a medium skillet over medium heat, stirring often, until browned and crisp, 5–8 minutes. Transfer to paper towels to drain; let cool.
  2. Process cheddar, cream cheese, and butter in a food processor until smooth. Pulse in scallion, pepper, Worcestershire sauce, and pancetta; season with salt. Scrape mixture into a small plastic wrap–lined bowl; gather plastic around cheese, using your hands to shape into a ball. Chill until firm, 3–12 hours.
  3. Just before serving, cook garlic in oil in a small saucepan over medium heat, stirring often, until golden brown, about 3 minutes. Drain on paper towels.
  4. Add shallots to saucepan and cook, stirring often, until golden brown and crisp, 5–8 minutes. Drain on paper towels; let cool. Discard oil. Mix garlic and shallots in a medium bowl. Roll cheese ball in mixture to coat. Sprinkle with Everything Bagel Spice Mix, pressing lightly to adhere. Serve with crackers.

  1. Preheat the oven to 275 degrees with the rack in the center. Butter the bottom and sides of a 9-inch springform pan. Set aside.
  2. Melt the butter in a pan over medium-low heat, add the cinnamon. Let it cool slightly, infusing the butter for at least 30 minutes. Whisk in egg yolks, brown sugar, salt and vanilla. Add the melted semi sweet chocolate and cocoa powder, stirring together.
  3. In a large bowl, beat egg whites until soft peaks form. Add white sugar, and continue beating until glossy stiff peaks form. Whisk 1/4 of the egg whites into the chocolate mixture. Gently fold in remaining egg whites equally into each bowl.
  4. Pour plain batter into the prepared pan, and then the chocolate layer. Once the cake pan is full, using a spoon or butter knife, swirl the batter in the pan, marbling it. Bake until the cake pulls away from the sides of the pan and is set in the center, about 50 minutes. Cool completely on a wire rack; remove sides of pan. Serve at room temperature.
  5. Dust top of cake lightly with smoked cinnamon, powdered sugar, flaked salt.

Kimchi Butter
  1. Pulse butter, kimchi and kimchi juice, and salt in a food processor, scraping down sides as needed, until kimchi is finely chopped and fully incorporated into butter. Cover and store at room temperature.
  2. Kimchi butter can be made 3 days ahead. Chill.
Chicken
  1. Grind coriander seeds, red pepper flakes, lemon zest, black peppercorns, cumin seeds, and 4 tsp. salt in a spice mill or with a mortar and pestle until very finely ground.
  2. Place chicken, skin side up, on a rimmed baking sheet. Using the heel of your hands, press firmly on breastbone to flatten. Season chicken on both sides with ¼ cup spice mixture, patting to adhere. Chill, uncovered, 3–8 hours.

  3. Boil potatoes in salted water until just tender, 15–20 minutes. Remove from heat and let sit uncovered until ready to use (up to 5 hours).
  4. Preheat oven to 550° (or maximum setting). Place chicken on a foil-lined rimmed baking sheet, leaving wings untucked. Place half of the kimchi butter in small pieces over the chicken and roast until browned but not fully cooked, 20–25 minutes. Arrange bacon, potatoes, and corn around chicken; sprinkle with reserved spice mixture. Roast until an instant-read thermometer inserted into the thickest part of the thigh registers 165°, 10–15 minutes. Transfer to a cutting board and let chicken rest 10 minutes before carving.
  5. Transfer bacon and vegetables to a large bowl and add remaining kimchi butter; toss to melt butter and coat vegetables. Serve alongside chicken.
