Instructions
  1. Make the Schezuan dry-brined turkey: Place the coriander, fennel and Schezuan peppercorns in a small skillet over medium heat and toast until fragrant, about 5 minutes. Let the mixture cool, then transfer to a spice grinder and pulse until the spices are coarsely ground. Transfer the spice mix to a small bowl and stir in the salt; set aside.
  2. Place the turkey on a clean work surface and trim off any excess pockets of fat or skin around the turkey. Flip the turkey so it is laying breast-side up. Using the heels of your hands, press down on the center of both breasts until you hear a cracking sound and the bird flattens.
  3. Pat the bird very dry using a kitchen towel and rub the spice mixture on both sides. Transfer the turkey, breast-side up, to a wire-rack placed over a parchment-lined sheet tray. Tuck the wings underneath. Store the turkey in the refrigerator for at least overnight and up to 24 hours.
  4. Remove the turkey an hour before roasting to take the chill off.
  5. Place the reserved backbone and neck in a roasting pan with the carrots, onions, thyme, bay leaf and stock. Place the turkey on a wire rack.
  6. Preheat the oven to 425°. Set one rack in the middle of the oven and another one below for the roasting pan. Place the turkey on the center rack of the oven. Place the roasting pan on the rack below the turkey and roast both for 30 minutes. Reduce the heat to 350° and finish roasting until the turkey is a deep golden brown and crisp or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°, another 40 to 50 minutes. Remove the turkey from the oven and, using two grilling spatulas, transfer the bird to a platter. Let the turkey rest for 30 minutes before carving.
  7. Meanwhile, make the gravy: Transfer the roasted neck-and-backbone turkey mixture along with the stock to a medium saucepan. Bring the liquid to a boil and reduce it by half, 10 minutes. Strain the stock through a fine sieve and discard the solids. Skim the stock of any excess fat before placing it back into the saucepan. Bring to a simmer.
  8. Meanwhile, in a small saucepan over medium heat, melt the butter. When the butter begins to foam, whisk in the flour. Reduce the heat to low and whisk until the roux is golden brown, 2 to 3 minutes.`
  9. Add 1 to 2 cups of hot stock to the roux, whisking constantly. Continue until all the stock has been added. Simmer until the gravy has thickened and the flavors have melded, about 5 minutes. Stir in the cream and season the gravy with salt and pepper. Carve the turkey and serve with the warm gravy.

  1. To prepare marinade, whisk together dry ingredients, beer, vinegar, garlic and then oil. Reserve 1½ cups for basting meat, mushrooms and onions while cooking.
  2. Pierce entire surface of meat with fork before pouring marinade on meat. Marinate meat, covered and refrigerated, for 1 hour. Remove meat and discard excess marinade. Do not reuse marinade. Grill or broil tri-tip over medium-high heat about 7 minutes per side or until seared. Move to coolest part of grill. Cover and cook about 30 minutes longer or until internal temperature reaches 135°F for medium rare. Baste meat occasionally with reserved marinade. Let rest 10 minutes before cutting.
  3. Place vegetables in sheet pan and brush with half of the reserved marinade. Grill or broil until tender and lightly browned. Cut vegetables into quarters and serve with thinly sliced tri-tip.

  1. Make the taco shell: Line a baking sheet with a paper towel. Pour enough oil into a large Dutch oven to reach a depth of 2 inches and heat until a deep-fry thermometer reaches 350˚. Working with 1 tortilla at a time, fry, flipping often until the tortilla is light golden, 45 seconds to 1 minute. Using tongs, push down on the center of the tortilla, so the outer edges flare and puff up. Continue to fry until golden brown and puffy, 1 minute more. Remove from the oil and place upside down over a glass cup set over the prepared baking sheet; season with salt. Repeat with the remaining tortillas.
  2. Make the crema: In a small bowl, combine the sour cream and spices. Stir. Let sit at least 15 mins for flavors to combine.
  3. Make the black beans: In a small saucepan over medium heat, add the olive oil. When the olive oil is hot, add the onions and season lightly with salt. Cook, stirring often, until soft but not brown, 4 to 5 minutes. Add the beans and water, and cook for 8 to 10 minutes. Stir in the oregano and keep warm on low heat.
  4. Make the grilled tomatoes: Prepare a medium-hot fire in a charcoal grill or heat a gas grill to medium-high heat. Alternatively, place a grill pan over medium-high heat. Brush the tomatoes with the oil and grill, flipping occasionally, until the tomatoes have blistered, 2 to 4 minutes. Season with salt, roughly chop and set aside.
  5. Make the skirt steak: In a small bowl, combine the paprika, cumin, salt, onion and garlic powders, and black pepper. Rub the steak with the seasoning.
  6. Grill the steak, flipping once, until it's lightly charred and cooked to preferred doneness, 3 minutes per side for medium rare. Transfer to a cutting board and let rest for 10 minutes before slicing.
  7. Assemble the taco salad: Drain the black beans and place them in a large bowl. Add the cabbage, grilled tomatoes, radishes, cilantro and mint. Add the olive oil, season with salt and toss.
  8. Divide the cabbage mixture among the 4 taco shells. Top each taco shell with the steak, avocado slices, jalapeño or serrano rounds, and Cotija. Garnish each shell with a lime wedge and serve with the crema.
