Memorial Day marks the start of the grilling and BBQ season. Instead of the same ol’ same old how about starting the season off with a bang? These grilled shrimp are perfect for tacos, skewers or in this recipe for tostadas!
Blackened Shrimp Tostadas
- Ingredients
- 1 lb shrimp (deveined and shelled)
- 1/2 tsp Chef Cherie’s Italian Blackening Seasoning
- 1/8 tsp pepper
- 2 tbsps olive oil
- 1 can refried beans
- 8 corn tortillas
- 1 avocado
- 1/2 cup tomatoes (chopped)
- 2 lime
Directions:
- Combine the dry ingredients in a small bowl. Toss the shrimp in the seasoning in a large plastic bag. Set aside.
- Chop your tomatoes, green onions, avocado, and limes for garnishes and set aside.
- Oil grill grate to prevent shrimp from sticking.
- Place shrimp on grill and cook for 1 to 2 minutes. *
- Turn and continue grilling for 30 seconds
- Test for doneness by cutting a shrimp in half. It should be pink all around and opaque through the middle.
- Heat the refried beans in a small sauce pan on the stove or microwave them until warm.
- Assemble by covering each tostada with a spoonful of warm refried beans, shrimp, and the rest of your fixings.
- If you would like to make homemade tostadas just heat a large skillet over medium heat with just enough oil to lightly cover the bottom of the pan. Heat 2 or 3 corn tortillas for approximately 3 minutes on each side until golden and crisp. Lightly salt them if you wish.
- Making the tostadas instead of using the store bought version makes this a bit longer to prepare, but it is worth the extra effort!
